Season the Steak
Take the porterhouse steaks out of the refrigerator and let them come to room temperature for about 30 minutes. Pat them dry with paper towels. Rub both sides of the steaks with olive oil, then generously season with kosher salt and black pepper.

Cook the Steak
Place the seasoned steaks on the hot grill or skillet. For medium-rare, cook for about 4-5 minutes on one side without moving it, then flip and cook for another 4-5 minutes. Add the rosemary and crushed garlic cloves to the pan during the last few minutes of cooking.

Rest the Steak
Remove the steaks from the heat and let them rest on a plate, covered loosely with foil for 5-10 minutes before slicing. This helps retain the juices.

Prepare the Asparagus
While the steaks are resting, rinse the asparagus and trim the woody ends. In a separate skillet, add 1 tablespoon of butter over medium heat. Once melted, add the asparagus and sauté for about 5-7 minutes until tender but still crisp.

Roast the Cherry Tomatoes
In the same skillet, add the cherry tomatoes. Drizzle with balsamic vinegar and cook for another 3-4 minutes until softened. Season with salt and pepper to taste.

Slice the rested porterhouse steaks and serve alongside the sautéed asparagus and roasted cherry tomatoes. Drizzle any remaining pan juices over the steak for added flavor.
