In a small bowl, combine the kosher salt, black pepper, garlic powder, onion powder, paprika, brown sugar, and cayenne pepper. Mix well until all ingredients are fully incorporated.

Pat the bone-in strip steaks dry with paper towels. This will help achieve a good sear. Generously rub the dry rub mixture onto both sides of the steaks, pressing it into the meat. Let the steaks rest at room temperature for 30 minutes to absorb the flavors.
