Wash and Cut Potatoes
Thoroughly wash the Russet potatoes under cold water. Cut each potato lengthwise into 1/4-inch thick slices, then cut those slices into 1/4-inch thick fries.

Soak Potatoes
Place the cut fries in a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes the fries crispier.

Heat Oil
In a large heavy-bottomed pot or deep fryer, pour in the vegetable oil and heat it to 350°F (175°C). Use a deep-fry thermometer to check the temperature.

Dry the Fries
After soaking, drain the fries and pat them dry with paper towels to remove excess moisture.

Fry Potatoes
Carefully add a batch of fries to the hot oil, making sure not to overcrowd the pot. Fry for about 4-5 minutes or until golden brown and crispy.

Drain and Season
Using a slotted spoon, remove the fries from the oil and place them on a plate lined with paper towels to drain excess oil. While still hot, sprinkle with salt, pepper, and garlic powder.
