Dressing Preparation

Make the Dressing
In a food processor, add the garlic cloves and anchovy fillets. Pulse until finely minced.

Add the Dijon mustard, Worcestershire sauce, and fresh lemon juice to the food processor. Blend until well combined.

With the processor running, slowly drizzle in the extra virgin olive oil until the dressing is emulsified and creamy.

Season the dressing with salt, black pepper, and grated Parmesan cheese. Blend briefly to combine, then taste and adjust seasoning if necessary.
Salad Preparation

Prepare the Salad
Wash and dry the hearts of romaine. Cut them into bite-sized pieces and place in a large bowl.

Once the croutons are cooled, cut them into cubes.

Pour the prepared Caesar dressing over the romaine, and toss to coat the leaves evenly.

Add the shaved Parmesan cheese and croutons to the salad. Toss gently to mix everything together.
