Preparation

  1. 1

    Season the Steak

Generously season the bone-in cowboy ribeye steak on both sides with kosher salt, black pepper, garlic powder, onion powder, and smoked paprika. Rub the seasoning into the meat to ensure it adheres well.

  2. 2

    Rest the Steak

Let the seasoned steak rest at room temperature for about 30-60 minutes before cooking. This helps the steak to cook more evenly.

Cooking

  1. 3

    Preheat the Grill or Oven

If using a grill, preheat it to high heat (around 450-500°F or 230-260°C). If using an oven, preheat to 425°F (220°C).

  2. 4

    Sear the Steak

Once the grill or oven is hot, drizzle olive oil on the steak. Place the ribeye steak on the grill or a hot cast-iron skillet in the oven. Sear for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached.

  3. 5

    Add Butter and Herbs (Optional)

In the last minute of cooking, add butter and a sprig of fresh thyme or rosemary on top of the steak. Allow it to melt and baste the steak with the flavored butter.

Resting

  1. 6

    Rest and Serve

Remove the steak from the grill or oven and let it rest for 10-15 minutes before slicing. This allows the juices to redistribute for a more flavorful steak. Slice against the grain and serve.
