Fish Preparation

Method

Fish Preparation

  1. 1

    Marinate the Fish

In a bowl, combine olive oil, lemon juice, minced garlic, chopped fresh parsley, salt, and black pepper. Whisk together until well mixed.

  2. 2

    Prepare the Fillets

Place the black grouper fillets in a shallow dish and pour the marinade over them. Ensure the fish is well coated. Cover and refrigerate for at least 30 minutes.

  3. 3

    Cook the Fish

Preheat a grill or grill pan over medium-high heat. Remove the fillets from the marinade and place them on the grill. Cook for about 4-5 minutes on each side, or until the fish flakes easily with a fork.

Side Dish

  1. 4

    Prepare the Asparagus

While the fish is marinating, wash the asparagus and trim the tough ends. Steam or blanch the asparagus for about 3-4 minutes until tender but still crisp.

  2. 5

    Roast the Tomatoes

Preheat your oven to 400°F (200°C). Toss the cherry tomatoes with balsamic vinegar and a pinch of salt. Spread them on a baking sheet and roast for 15-20 minutes until they are blistered.

  3. 6

    Combine the Side Dish

Once the asparagus is cooked and the tomatoes are roasted, combine them in a serving dish. Crumble feta cheese on top and serve alongside the black grouper.
