Crust Preparation

Make the Pie Crust

In a large bowl, mix the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs.

Form the Dough

Add ice water, one tablespoon at a time, until the dough comes together. Shape into a disk, wrap in plastic, and refrigerate for at least 1 hour.

Roll Out the Dough

On a floured surface, roll out the dough to fit a 9-inch pie pan. Transfer to the pan and trim the edges.

Pre-bake the Crust

Preheat your oven to 425°F (220°C). Prick the bottom of the crust with a fork and bake for 10-12 minutes until lightly golden. Remove and let cool.

Mix the Filling

In a large bowl, combine pumpkin puree, sugar, cinnamon, ginger, nutmeg, and salt. Mix well.

Add Eggs and Milk

Beat in the eggs one at a time, then stir in the evaporated milk until fully incorporated.

Fill the Crust

Pour the filling into the pre-baked pie crust, spreading it evenly.

Baking and Serving

Bake the Pie

Reduce the oven temperature to 350°F (175°C). Bake the pie for 40-50 minutes, or until the filling is set and a knife inserted near the center comes out clean.

Cool the Pie

Allow the pie to cool at room temperature for at least 2 hours before serving.

Prepare Whipped Cream

In a medium bowl, beat heavy cream, powdered sugar, and vanilla extract until soft peaks form.

Serve

Slice the cooled pumpkin pie and serve with a generous dollop of whipped cream on top.
