    Prepare the Snapper

    Preheat your oven to 400°F (200°C). Rinse the whole snapper under cold water and pat it dry with paper towels.

    Season the Fish

    Drizzle olive oil over the fish, rubbing it into the skin. Season the inside and outside with salt and black pepper. Stuff the cavity with lemon slices, minced garlic, and fresh herbs.

    Roast the Snapper

    Place the snapper on a baking sheet lined with parchment paper. Roast in the preheated oven for 25-30 minutes or until the fish flakes easily with a fork.

    Prepare Summer Beans and Bacon

    While the fish is roasting, cook 4 slices of bacon in a skillet until crispy. Remove bacon and set aside, leaving the drippings. Add 2 cups of summer beans (such as green beans, wax beans, or any preferred variety) to the skillet and sauté until tender, about 5-7 minutes. Crumble the bacon and mix it back in with the beans.

    Serve

    Once the snapper is done, remove it from the oven. Serve immediately with the sautéed summer beans and bacon on the side.
