Pumpkin Pudding

Cranberry Jam

Candied Pepitas

Method

Pumpkin Pudding

  1. 1

    Prepare the Pudding

In a mixing bowl, combine pumpkin puree, brown sugar, heavy cream, milk, eggs, cinnamon, nutmeg, ginger, vanilla extract, and salt. Mix until smooth.

  2. 2

    Bake

Pour the mixture into a greased baking dish. Bake at 350°F (175°C) for 45-50 minutes or until set. Let cool before serving.

Cranberry Jam

  1. 3

    Cook the Jam

In a saucepan, combine cranberries, sugar, water, orange juice, and orange zest. Cook over medium heat until the cranberries burst and the mixture thickens, about 15-20 minutes. Let cool.

Candied Pepitas

  1. 4

    Candy the Pepitas

In a skillet, combine pepitas, sugar, cinnamon, water, and salt. Cook over medium heat, stirring frequently, until the sugar melts and coats the seeds, about 5-7 minutes. Spread on parchment paper to cool.

Shortbread

  1. 5

    Make the Shortbread

In a bowl, cream together softened butter and powdered sugar. Gradually add flour, vanilla, and salt. Mix until crumbly. Press into a greased baking dish. Bake at 325°F (162°C) for 20-25 minutes until lightly golden. Let cool and cut into squares.
