Prepare the Potato Pillows

    Cook the Potatoes

    Peel and chop the Russet potatoes into chunks. Boil them in salted water until fork-tender, about 15-20 minutes. Drain and let them cool slightly.

    Make the Dough

    In a large bowl, mash the boiled potatoes until smooth. Add the egg, salt, and black pepper. Gradually mix in the flour until a soft dough forms.

    Shape the Pillows

    On a floured surface, roll out the dough to about 1/4 inch thick. Cut into squares (about 2 inches). Fold each square into a triangle, pinching the edges to seal them.

    Cook the Pillows

    In a large skillet, melt the butter over medium heat. Add the potato pillows and cook until golden brown on both sides, about 3-4 minutes per side. Drain on paper towels.

    Place the cooked potato pillows on a serving platter. Top each pillow with a dollop of crème fraîche and a teaspoon of California sturgeon caviar.
