Cut the Potatoes
Peel the Russet potatoes and cut them into thin strips, about 1/4 inch thick.

Heat the Oil
In a large, heavy pot, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Dry the Potatoes
Drain the soaked potatoes and pat them dry with paper towels to remove moisture.

Fry the Potatoes (First Fry)
Carefully add the potatoes in batches to the hot oil and fry for about 3-4 minutes until they are soft but not browned. Remove with a slotted spoon and drain on paper towels.

Fry the Potatoes (Second Fry)
Increase the oil temperature to 375°F (190°C). Fry the potatoes again in batches for another 2-3 minutes until they are golden brown and crispy. Drain on paper towels and sprinkle with salt.
