    Prepare the Bones

    Preheat the grill to medium-high heat. Place the marrow bones upright on a tray and drizzle with olive oil. Season generously with sea salt, black pepper, and sprinkle fresh herbs on top.

    Grill the Bones

    Place the seasoned marrow bones on the grill, cut side up. Grill for about 10-15 minutes until the marrow is bubbling and starts to pull away from the bone.

    Make the Dough

    In a bowl, combine durum wheat flour, active dry yeast, and salt. Gradually add water and olive oil, mixing until a dough forms.

    Knead and Rise

    Knead the dough on a floured surface for about 10 minutes until smooth. Place in a greased bowl, cover, and let rise for about 1 hour or until doubled in size.

    Shape and Grill

    Preheat the grill to medium heat. Shape the risen dough into a batard (oval shape) and let it rest for 15 minutes. Grill on each side for 4-5 minutes, or until golden brown with grill marks.
