Pork Chop Preparation

Season the Pork Chops
Pat the pork chops dry with paper towels. Season both sides with salt, black pepper, garlic powder, and thyme.

Sear the Pork Chops
In a large skillet, heat olive oil over medium-high heat. Once hot, add the pork chops and sear for 4-5 minutes on each side, or until golden brown and cooked through. Remove from skillet and let rest.

Prepare the Mostarda
In a medium saucepan, combine diced peaches, plums, Dijon mustard, honey, and apple cider vinegar. Cook over medium heat until the fruit is tender and the mixture is slightly thickened, about 10 minutes.

Season the Mostarda
Season with salt and black pepper to taste. Remove from heat and let cool slightly before serving.

Slice the pork chops and serve topped with the stone fruit mostarda.
