Prepare Sushi Rice
Rinse sushi rice under cold water until the water runs clear. Combine rice and water in a rice cooker and cook according to manufacturer's instructions. Once cooked, let it cool slightly.

Season Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold the mixture into the cooled rice and let it cool to room temperature.

Make Clementine Pico
Combine clementine segments with a pinch of salt and set aside.

Prepare Grapefruit Glaze
In a small bowl, mix grapefruit juice with soy sauce and sesame oil.

Make Spicy Sesame Aioli
In another bowl, mix mayonnaise, sriracha, and a sprinkle of sesame seeds.

Assemble the Poke Bowl
In a serving bowl, place a scoop of sushi rice as the base. Top with diced cucumber, radish, avocado, and black tobiko. Drizzle with grapefruit glaze and add a dollop of spicy sesame aioli.

Garnish with chives and additional sesame seeds, if desired. Serve immediately.
