Directions to Prepare Sweet Potato Crusted Salmon

Prepare the Sweet Potato Crust
Peel and chop the sweet potatoes into cubes. Boil them in salted water until tender, about 15 minutes. Drain and mash until smooth. Season with salt and pepper.

Prepare the Salmon
Preheat the oven to 400°F (200°C). Place the salmon fillets on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and pepper.

Assemble the Dish
Spread the mashed sweet potatoes evenly over the top of each salmon fillet, creating a crust.

Bake the Salmon
Bake in the preheated oven for 15-20 minutes or until the salmon is cooked through and the sweet potato crust is slightly golden.

Make the Cauliflower Puree
Cut the cauliflower into florets and boil in salted water until tender. Drain and blend with butter until smooth. Season to taste.

Prepare the Toasted Hazelnut Gremolata
Chop the toasted hazelnuts and mix with chopped parsley and lemon zest.

Serve
Plate the salmon with a generous scoop of cauliflower puree on the side, topped with hot honey Brussels sprouts and sprinkled with the hazelnut gremolata.
