Prepare the Sauce
In a large skillet, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery, and sauté until softened, about 5-7 minutes.

Add the diced pancetta and cook until it begins to crisp, about 3 minutes.

Stir in the minced garlic and cook for another minute until fragrant.

Add the ground veal and ground pork, breaking it apart with a wooden spoon. Cook until browned, about 5-7 minutes.

Pour in the red wine and let it simmer for 2-3 minutes until reduced slightly.

Add the crushed tomatoes, salt, and black pepper. Reduce the heat to low and let the sauce simmer for at least 20 minutes, stirring occasionally.

Cook the Pasta
While the sauce is simmering, bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente.

Once cooked, drain the fettuccine and reserve a cup of pasta water.

Combine and Serve
Add the cooked fettuccine to the sauce and toss to combine. If the sauce is too thick, add a bit of reserved pasta water to reach desired consistency.

Stir in the chopped fresh basil and serve topped with grated Parmesan cheese.
