Method

Cooking Directions

  1. 1

    Marinate the Steak

In a bowl, mix olive oil, garlic powder, cumin, chili powder, salt, and black pepper. Coat the flank steak with the marinade and let it sit for at least 1 hour or overnight in the refrigerator.

  2. 2

    Cook the Steak

Preheat a grill or skillet over medium-high heat. Cook the marinated steak for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached. Remove from heat and let it rest for 5 minutes before slicing.

  3. 3

    Prepare the Tacos

While the steak is resting, warm the corn tortillas on the grill or in a skillet. Slice the steak thinly against the grain.

  4. 4

    Assemble the Tacos

On each tortilla, add sliced steak, a spoonful of red beans, diced avocado, corn salsa, and a drizzle of baja sauce. Squeeze fresh lime juice over the top before serving.
