Prepare the Sweet Potato (if vegetarian)
If using sweet potato instead of spicy sausage, peel and dice it into small cubes. Boil or steam until tender, about 10-15 minutes. Drain and set aside.

Cook the Sausage
In a skillet over medium heat, cook the spicy sausage until browned and fully cooked, breaking it up into crumbles as it cooks. Remove from heat and set aside.

Scramble the Eggs
In a large bowl, whisk together the eggs. In the same skillet, add a little oil if necessary and pour in the eggs. Cook over medium-low heat, stirring gently until scrambled and cooked to your desired doneness.

Assemble the Burritos
On each flour tortilla, layer the cooked sausage (or sweet potato), scrambled eggs, pepper jack cheese, pico de gallo, and a drizzle of chipotle mayo.

Roll the Burritos
Fold in the sides of the tortilla, then roll tightly from one end to the other to enclose the filling.

Serve
Serve the burritos warm, optionally with additional pico de gallo or chipotle mayo on the side.
