Mix dry ingredients

In a medium bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and fine salt until evenly combined.

Combine wet ingredients

In a separate bowl or large measuring cup, whisk the milk, egg, melted butter, and vanilla extract until smooth and slightly frothy.

Make batter

Pour the wet ingredients into the dry ingredients. Stir gently with a spatula or spoon until just combined — small lumps are fine. Do not overmix. The batter should be pourable but slightly thick; if too thick, add 1–2 tablespoons (15–30 ml) milk.

Prepare Oreo pieces

Coarsely crush about 6 Oreo cookies by placing them in a zip-top bag and pressing with a rolling pin or pulsing briefly in a food processor. Leave some larger chunks for texture.

Portion Nutella

Spoon about 1½ tablespoons of Nutella per pancake into two small dollops on a plate or parchment. If Nutella is very thick, microwave for 10–15 seconds to loosen slightly so it will spread when sandwiched.

Cooking & Assembly

Heat pan

Heat a nonstick skillet or griddle over medium-low to medium heat. Brush with a thin layer of vegetable oil or melted butter to coat.

Cook pancake bases

For each pancake, pour about 1/3 cup (approximately 75 ml) of batter onto the hot skillet to form a round pancake roughly 9–10 cm (3.5–4 in) across. Sprinkle a tablespoon of crushed Oreo pieces onto the batter while it is still wet so they adhere.

Flip and finish

When bubbles form across the surface and the edges look set (about 2–3 minutes), gently flip the pancake. Cook the second side until golden and cooked through, about 1–2 minutes more. Transfer cooked pancakes to a plate and keep warm. Repeat to make a second pancake base (you should have 2 pancake bases total).

Assemble Nutella sandwich pancakes

Place one cooked pancake on a plate, spread or dollop 1½ tablespoons Nutella on top (use warm Nutella for easier spreading), then top with the second pancake to make a sandwich. Press lightly so Nutella spreads to the edges. If you prefer an open-faced presentation, stack pancakes and drizzle Nutella on top instead.

Finish and serve

Dust with powdered sugar, drizzle with extra Nutella if using, and sprinkle additional crushed Oreos on top. Serve immediately while warm.
