Prepare the Tuna
Slice the sushi-grade Ahi tuna into 1-inch thick steaks.

Crust the Tuna
In a shallow bowl, mix the black and white sesame seeds. Press each steak into the sesame mixture, coating all sides evenly.

Sear the Tuna
Heat the vegetable oil in a skillet over medium-high heat. Add the sesame-crusted tuna steaks and sear for about 30 seconds on each side, until the outside is golden brown but the center remains rare.

Slice and Serve
Remove the tuna from the skillet and let it rest for a minute. Slice the tuna into thin strips and arrange on a serving platter. Drizzle with soy sauce, and serve with wasabi paste and pickled ginger on the side.
