    Prepare the Walleye

    Rinse the walleye fillets under cold water and pat them dry with paper towels. Season both sides of the fillets with salt and black pepper.

    Set Up Breading Station

    In a shallow dish, place the all-purpose flour. In another dish, whisk together the beaten eggs and milk. In a third dish, spread the finely chopped pecans.

    Bread the Fillets

    Coat each walleye fillet in flour, shaking off any excess. Dip it into the egg mixture, then press it into the chopped pecans until fully coated.

    Cook the Fillets

    In a large skillet, heat olive oil over medium heat. Once hot, add the pecan-crusted walleye fillets and cook for about 4-5 minutes on each side, or until golden brown and cooked through.

    Serve

    Remove the fillets from the skillet and place them on paper towels to drain excess oil. Serve hot with lemon wedges on the side.
