    Prepare Lobster Stock

    In a large pot, melt 2 tablespoons of butter over medium heat. Add lobster shells and sauté for 5 minutes until fragrant. Add onion, carrot, celery, and garlic, and cook until softened.

    Add Liquids

    Stir in tomato paste, then pour in dry white wine. Bring to a simmer and let cook for 10 minutes. Add fish stock or water and bring to a boil, then reduce heat and simmer for 30 minutes.

    Strain Stock

    Remove from heat and strain the mixture through a fine mesh sieve into another pot, discarding the solids. Return the stock to the pot.

    Make the Bisque

    In the same pot, melt the remaining 2 tablespoons of butter over medium heat. Add the strained stock and bring to a simmer. Stir in the heavy cream and chopped lobster meat. Season with salt, black pepper, fresh thyme, and cayenne pepper to taste.

    Serve

    Heat through but do not boil. Serve hot, garnished with additional lobster meat or fresh herbs if desired.
