Prep and marinate steak

If not pre-sliced, partially freeze steak 20–30 minutes then slice very thin across the grain. Place sliced steak in a bowl and add 1 tbsp olive oil, 1 tbsp Worcestershire sauce, 1 tsp soy sauce, 1 tsp minced garlic, 1 tsp black pepper, and 1/2 tsp salt. Toss to coat and let marinate at room temperature for 10–15 minutes (or refrigerate up to 2 hours).

Cook steak

Heat a large cast-iron skillet or griddle over high heat until very hot. Add the marinated steak in an even layer (work in two batches if necessary). Sear undisturbed 1–2 minutes to develop color, then stir and spread again, cooking a total of 3–4 minutes until just cooked through and slightly browned. Remove steak to a plate and keep warm.

Cook onions, peppers, and mushrooms

Wipe the same skillet clean and turn heat to medium-high. Add 1 tbsp olive oil and 1 tbsp butter. When butter melts and is foaming, add the thinly sliced onion and 1/2 cup sliced peppers (if using). Cook, stirring occasionally, 6–8 minutes until soft and caramelized at the edges. Add 1 cup sliced mushrooms, 1/2 tsp salt, and 1/4 tsp black pepper. Continue cooking 4–5 minutes until mushrooms release moisture and brown. Push vegetables to the side or remove to a bowl and keep warm.

Combine steak and vegetables

Return the cooked steak to the skillet with the vegetables and toss together over medium heat just until everything is evenly mixed and hot, about 1–2 minutes. Taste and adjust seasoning with a pinch more salt or pepper if needed.

Prep rolls

Slice the hoagie rolls lengthwise, keeping one hinge if desired. Spread a light layer of mayonnaise inside each roll if using. Heat a separate skillet or griddle over medium heat and add 1 tbsp butter. Toast the cut sides of the rolls until golden, about 1–2 minutes.

Melt cheese on steak

Divide the steak-and-vegetable mixture evenly between the two rolls in the skillet, scooping it into two mounds. Lay 2 slices of white American cheese over each mound. Cover the skillet with a lid or a large metal bowl for 30–45 seconds to steam and fully melt the cheese.

Assemble sandwiches

Using a spatula, transfer each cheesy steak filling into the toasted rolls. If desired, add extra sautéed peppers on top. Serve immediately while hot.
