Warm turkey and stuffing
If turkey and stuffing are refrigerated, remove them from the fridge 10 minutes before using. Warm turkey slices gently in a skillet over low heat for 2–3 minutes with a teaspoon of water to avoid drying, or microwave in 15–20 second bursts until warm. Warm stuffing in a small saucepan over low heat, stirring occasionally, until heated through (about 3–5 minutes) or microwave covered for 30–45 seconds.
Make quick hot-twist sauce
In a small bowl combine 1 tablespoon mayonnaise, 1 teaspoon Greek yogurt or sour cream, 1 teaspoon hot sauce, 1/2 teaspoon lemon juice, 1/8 teaspoon cayenne (if using), and 1/16 teaspoon salt. Whisk until smooth. Taste and adjust heat or acidity as desired. This sauce adds moisture and a controlled kick. Reserve.
Assemble Sandwich
Butter and toast bread
Spread the softened butter evenly on the outside faces of both bread slices. Heat a nonstick skillet or griddle over medium heat until shimmering. Place bread, butter-side down, and toast until golden, about 1–2 minutes. Flip briefly (30–45 seconds) to warm the other side, then remove and place toasted slices butter-side down on your workspace.
Spread condiments
On one toasted slice spread the prepared hot-twist sauce (all of it) or use 1 tablespoon mayonnaise mixed with 1 teaspoon hot sauce if you prefer. On the other slice spread 2 tablespoons cranberry sauce across the surface, leaving a small margin at the edge to prevent squeezing out.
Layer fillings
Place the warmed turkey slices (about 4 oz) evenly over the cranberry-covered slice. Season turkey lightly with 1/8 teaspoon salt and 1/16 teaspoon black pepper. Spoon the warmed stuffing (1/2 cup) over the turkey and spread gently to an even layer. If using, top with one slice of sharp cheddar.
Grill to melt and marry flavors
Return the assembled sandwich to the skillet, butter-side down, and press gently with a spatula or a second pan. Cook over medium-low heat for 1.5–2 minutes, watching so the bread browns without burning and the cheese (if used) melts. Flip once, cook an additional 30–60 seconds to heat through and crisp both sides. Alternatively, place in a preheated panini press for 2–3 minutes until golden and heated through.
Finish and serve
Transfer sandwich to a cutting board and rest 1 minute, then slice in half on the diagonal. Serve immediately with optional pickle spear and crisps or fries.
