Sauté aromatics

Place a small saucepan over medium heat. Add the minced shallot and cook, stirring, for 1 to 1½ minutes until softened and translucent but not browned. Add the minced garlic and cook another 20–30 seconds until fragrant.

Deglaze and reduce

Add the dry red wine to the pan to deglaze, scraping any browned bits from the bottom. Increase heat to medium-high and simmer until the wine reduces by about half, roughly 1–2 minutes.

Combine stocks and flavorings

Add the beef stock and beef demi-glace to the saucepan along with the thyme sprig, Worcestershire sauce, and soy sauce. Bring the mixture to a gentle simmer.

Simmer and concentrate

Reduce heat to maintain a gentle simmer and cook for 6–8 minutes, stirring occasionally, until the sauce is slightly thickened and flavors have concentrated. If the jus becomes too thick, stir in up to the listed filtered water, 1 tablespoon at a time, until desired consistency is reached.

Finish and season

Remove the thyme sprig. Turn off the heat and whisk in the cold unsalted butter until fully incorporated and the sauce is glossy. Taste and adjust seasoning with kosher salt and freshly ground black pepper. If necessary, balance with an additional 1/4 tsp Worcestershire or 1/4 tsp soy sauce for umami.

Strain and serve

For an especially smooth presentation, pass the jus through a fine-mesh sieve into a warmed small serving bowl or gravy boat, pressing on solids to extract flavor. Serve warm alongside sliced beef, roast, or as directed on the menu. Keeps warm for up to 1 hour over very low heat; reheat gently if needed.
