Preparation and Cooking

Prepare the Marinade

In a small bowl, mix together minced garlic, chopped rosemary, olive oil, salt, and black pepper to create a marinade.

Marinate the Lamb

Rub the marinade all over the rack of lamb, ensuring it is well coated. Cover and let it marinate in the refrigerator for at least 1 hour, or overnight for more flavor.

Prepare the Potatoes

Preheat the grill to medium-high heat. While the grill is heating, wash the baby potatoes and cut them in half. Boil in salted water for about 10 minutes or until slightly tender.

Grill the Lamb

Remove the lamb from the refrigerator and let it come to room temperature. Grill the rack of lamb on the preheated grill for about 4-5 minutes per side for medium-rare, or until it reaches your desired doneness.

Cook the Potatoes and Vegetables

Once the lamb is almost done, toss the boiled potatoes with olive oil, salt, and pepper. Grill them alongside the lamb until golden brown, about 5-7 minutes. Add seasonal vegetables to the grill for the last 3-5 minutes.

Rest and Serve

Remove the lamb from the grill and let it rest for 5-10 minutes before slicing. Serve the grilled lamb with house potatoes and seasonal vegetables.
