Prepare the Mussels

Rinse the mussels under cold water, scrubbing the shells with a brush. Remove any beards and discard any mussels that are open and do not close when tapped.

Sauté Aromatics

In a large pot, heat the olive oil over medium heat. Add the minced shallots and garlic, and sauté until they are translucent, about 2-3 minutes.

Add Wine and Lemon Juice

Pour in the white wine and fresh lemon juice. Bring the mixture to a simmer.

Steam the Mussels

Add the cleaned mussels to the pot. Cover and steam for about 5-7 minutes, or until all the mussels have opened.

Finish the Dish

Remove the pot from heat. Drizzle caper oil over the mussels and sprinkle with chopped parsley. Season with salt and black pepper to taste.

Serve the mussels immediately with the broth, and enjoy with crusty bread.
