Prepare the Filet Mignon
Remove the filet mignon from the refrigerator and let it sit at room temperature for about 30 minutes. Preheat your grill or charbroiler to high heat.
Wrap with Bacon
Wrap the filet mignon with the hickory bacon, securing it with toothpicks if necessary.
Season the Steak
Rub the filet mignon with olive oil, then season generously with salt and black pepper on all sides.
Grill the Filet
Place the bacon-wrapped filet mignon on the grill. Cook for about 4-5 minutes on each side for medium-rare, or until it reaches your desired doneness.
Make Garlic Butter
While the steak is cooking, finely mince the garlic. In a small saucepan, melt the unsalted butter over low heat and add the minced garlic. Cook gently for 1-2 minutes until fragrant, then remove from heat.
