    Prepare the Pork

    Preheat your oven to 300°F (150°C). Rub the pork shoulder with olive oil, salt, black pepper, garlic powder, and onion powder.

    Sear the Pork

    In a large oven-safe pot, sear the pork shoulder on all sides over medium-high heat until browned, about 5 minutes per side.

    Add Broth

    Pour the chicken broth into the pot with the pork shoulder, then cover with a lid or foil.

    Roast the Pork

    Transfer the pot to the preheated oven and roast for 4-5 hours, or until the pork is fork-tender.

    Prepare the Peas

    While the pork is roasting, prepare the English peas by blanching them in boiling water for 2 minutes, then shock them in ice water.

    Combine Ingredients

    Once the pork is done, remove it from the oven and let it rest for 10-15 minutes. Shred the pork and mix in the whole grain Dijon mustard and blanched peas.

    Garnish with pea shoots and serve the pork mixture warm.
