Cooking the Fluke

Season the fluke fillets with salt, pepper, and grated ginger. Let it marinate for about 15 minutes.

Pour in white wine and fish stock, bringing it to a boil. Reduce the heat and simmer until the liquid is reduced by half.

Stir in the heavy cream and cook until the sauce thickens. Add chopped chives and season with salt and pepper to taste.
