Prepare the Marinade
In a small bowl, mix together olive oil, minced garlic, cumin, paprika, salt, and black pepper to create a marinade.

Marinate the Pork
Rub the marinade all over the pork shoulder and let it sit for at least 1 hour, or overnight in the refrigerator for best results.

Sear the Meat
In a large skillet or Dutch oven, heat some olive oil over medium-high heat. Once hot, add the marinated pork shoulder and sear on all sides until browned.

Add Vegetables and Broth
Remove the pork from the skillet, and add chopped onion and bell pepper. Sauté until softened, about 5 minutes. Return the pork to the pot and add the chicken broth.

Simmer
Cover and reduce heat to low. Let it simmer for about 2 hours or until the pork is tender and easily shredded with a fork.

Finish and Serve
Stir in lime juice and chopped cilantro. Serve the pulled pork with your choice of sides or on a bun.
