Cider Preparation

    Prepare the Pears

    Wash, core, and chop the pears into small pieces. Place them in a large fermentation vessel.

    Add Water

    Pour the water over the chopped pears in the fermentation vessel, ensuring they are fully submerged.

    Add Sugar and Acidity

    Stir in the sugar, citric acid, and optional tannin until well combined.

    Add Yeast

    Sprinkle the yeast over the mixture and gently stir to incorporate.

    Fermentation

    Cover the fermentation vessel with a clean cloth and let it sit in a cool, dark place for about 7-14 days, stirring daily.

    Straining

    After fermentation, strain the liquid through a fine mesh sieve or cheesecloth into clean bottles, discarding the solids.

    Bottling

    Seal the bottles tightly and let them age in a cool place for at least 1-3 months for best flavor.
