Prepare the Gigante Beans
Soak the gigante beans in water overnight. The next day, drain and rinse them. Cook the beans in a pot of boiling salted water for about 45 minutes, or until tender. Drain and set aside.

Cook the Octopus
Bring a large pot of water to a boil. Add the octopus and cook for 30-40 minutes until tender. Remove from water and let cool slightly before cutting into serving pieces.

Prepare the Chorizo
In a frying pan, heat the olive oil over medium heat. Add sliced chorizo and cook until crispy, about 5-7 minutes. Remove from heat and set aside.

Combine Ingredients
In a large mixing bowl, combine the cooked gigante beans, chorizo, and paprika. Add the octopus pieces and gently toss to combine. Season with salt and black pepper to taste.

Serve
Plate the octopus and bean mixture, drizzling with aioli. Serve with lemon wedges on the side.
