Caramelize the Onions
In a skillet, melt 1 tablespoon of butter over medium heat. Add sliced onions and a pinch of salt. Cook for about 20-25 minutes, stirring occasionally, until onions are soft and caramelized. Set aside.

Prepare Shallot Aioli
In a small bowl, mix mayonnaise, sliced shallots, lemon juice, and a pinch of salt. Set aside in the refrigerator to let the flavors meld.

Form and Cook the Burgers
In a large bowl, combine ground beef, salt, and pepper. Form into 4 patties. Heat remaining butter and olive oil in a skillet over medium-high heat. Cook patties for about 4-5 minutes on each side, or until desired doneness. In the last minute, place a slice of Gruyère cheese on each patty to melt.

Toast the Buns
Slice the brioche buns and toast them in the skillet for about 1-2 minutes until golden brown.

Assemble the Burgers
Spread shallot aioli on the bottom half of each toasted brioche bun. Add the burger patty with melted Gruyère, followed by the caramelized onions and pickles. Top with the other half of the bun.

Prepare the Fries
Cook fries according to package instructions or fry homemade fries until golden brown and crispy.

Serve
Serve the burgers with a side of fries.
