Prepare the Chicken
Preheat your smoker to 250°F (121°C). Rub the chicken halves with olive oil, minced garlic, smoked paprika, salt, and black pepper. Let them marinate for about 30 minutes.

Smoke the Chicken
Place the chicken halves skin-side up in the smoker. Smoke for about 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C).

Prepare the Vegetables
While the chicken is smoking, prepare the nopales and summer squash. Rinse the nopales and cut them into strips. Sauté them in a pan with a tablespoon of olive oil until tender, about 5-7 minutes. Add the summer squash and cook until soft.

Make the Avocado Tomatillo Salsa
In a blender, combine the avocado, tomatillos, lime juice, and a pinch of salt. Blend until smooth, adjusting seasoning to taste.

Once the chicken is done, serve it alongside the sautéed nopales and summer squash, topped with the avocado tomatillo salsa.
