For the Hand Cut French Fries

    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thick strips (about 1/4 to 1/2 inch wide). Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

    Fry the Potatoes

    Drain the soaked potatoes and pat them dry with a kitchen towel. Fry the potatoes in batches, avoiding overcrowding, for about 5-7 minutes until they are golden and crispy. Remove with a slotted spoon and drain on paper towels.

    While the fries are still hot, sprinkle them with garlic powder, paprika, salt, black pepper, parsley, and rosemary. Toss to coat evenly.
