Method
Prepare Glass
Salt the rim
Pour kosher salt onto a small plate. Run the lime wedge around the rim of a rocks or coupe glass to moisten. Dip the rim into the salt to evenly coat about half to three-quarters of the rim. Set the glass aside.
Mix Cocktail
Add 2 oz reposado tequila, 1 oz Aperol, 0.75 oz fresh lime juice, and 0.5 oz agave nectar to a cocktail shaker.
Fill the shaker with ice (about 5–6 pieces). Secure the lid and shake vigorously for 12–15 seconds, until the outside of the shaker is very cold and slightly frosted.
Double-strain the cocktail into the prepared glass (over fresh ice if serving on the rocks, or without ice if serving up). Use a Hawthorne strainer and a fine mesh strainer to remove small ice chips and any pulp.
Garnish & Serve
Express the oils of a grapefruit peel (if using) over the drink by holding the peel over the surface and giving it a quick twist, then discard or drop it on top as a garnish. Alternatively, float a lime wheel or a small edible pink flower on the surface.
Serve immediately. Suggest pairing: light seafood or salty snacks to contrast the slightly bitter-sweet profile.
