1. Prepare wings
Pat the chicken wings dry with paper towels. Trim any excess skin or tips if desired. Place wings in a bowl and toss with 2 tbsp neutral oil, 1 tsp kosher salt, and 1 tsp freshly ground black pepper until evenly coated.
2. Cook wings (oven-roast method)
Preheat oven to 425°F (220°C). Arrange wings in a single layer on a rimmed baking sheet lined with foil and a wire rack set over the sheet. Roast for 25 minutes, then flip wings and roast an additional 12–18 minutes until skin is deep golden and internal temperature reaches 165°F (74°C). Total roasting time ~37–43 minutes depending on wing size.
3. OR Cook wings (fried method)
Heat 2–3 inches of neutral oil in a deep pan to 360°F (182°C). Fry wings in batches 6–8 minutes until deep golden and cooked through. Drain on paper towels and transfer to a warm tray. (If using fryer, adjust cook times and temperature per equipment.)
Sweet Maple-Bourbon Glaze
4. While wings cook, make the glaze: in a small saucepan combine 1 cup maple syrup, 2 tbsp bourbon, 2 tbsp unsalted butter, 1 tsp soy sauce, 1 tsp apple cider vinegar, 1 tsp minced garlic, and 1/4 tsp black pepper. Bring to a gentle simmer over medium heat, stirring occasionally.
5. Simmer glaze for 6–8 minutes until slightly thickened and glossy. Taste and adjust: add a pinch of salt if needed. Remove from heat and keep warm. (Do not boil vigorously to preserve bourbon flavor.)
6. When wings are cooked, place them in a large mixing bowl or back on the warm tray. Pour 3/4 of the warm glaze over the wings and toss gently to coat evenly. Reserve remaining glaze for serving.

10. Make the dip: in a small bowl, beat together 4 oz softened cream cheese, 1/4 cup sour cream, and 2 tbsp mayonnaise until smooth. Fold in 1/2 cup crumbled blue cheese, 1/2 tsp lemon juice, 1/8 tsp black pepper, and 1/8 tsp kosher salt. Taste and adjust seasoning.
