Prep wings

Pat the wings dry with paper towels to remove surface moisture. This helps achieve crispness.

Place the wings in a large bowl. Add baking powder, kosher salt, black pepper, and vegetable oil. Toss thoroughly until wings are evenly coated. The baking powder will help crisp the skin in the oven (or when air fried).

For oven method: Arrange wings on a wire rack set over a rimmed baking sheet, skin side up, spaced so air can circulate. Refrigerate uncovered for 15–30 minutes if time allows (this further dries the skin). Preheat oven to 425°F (220°C). Bake for 25–30 minutes, then flip and bake another 10–15 minutes until deeply golden and crisp and internal temperature reaches 165°F (74°C). Total bake time ~35–45 minutes depending on size.

For frying method (optional for extra crispness): Heat 2 inches of vegetable oil in a deep skillet or pot to 350°F (175°C). Fry wings in batches 6–8 minutes until golden and cooked through, drain on paper towels, then briefly return to 375°F (190°C) for 1 minute for extra crisp, if desired.

Spicy Sauce

While wings cook, make the spicy sauce. In a small saucepan over low heat, melt the unsalted butter.

Add the minced garlic to the melted butter and sauté 20–30 seconds until fragrant (do not brown).

Stir in hot sauce, chili garlic sauce, honey, soy sauce, apple cider vinegar, smoked paprika, and red pepper flakes (if using). Whisk until smooth and heated through, about 1–2 minutes. Remove from heat and stir in fresh lime juice.

Taste and adjust: add a little more honey to mellow heat, more hot sauce for heat, or a splash more vinegar for brightness.

Finish & Serve

Place the cooked wings in a large clean bowl. Pour the warm spicy sauce over the wings.

Toss vigorously until every wing is evenly coated. If you want saucier wings, reserve a few tablespoons of sauce and add more as needed.

Transfer wings to a serving platter. Garnish with chopped cilantro, serve with celery sticks and ranch or blue cheese dressing on the side.

Serve immediately while hot and crispy.
