Marinate the Chicken
In a large bowl, combine buttermilk, hot sauce, salt, black pepper, paprika, garlic powder, and onion powder. Add the chicken pieces, ensuring they are well coated. Cover and refrigerate for at least 2 hours, preferably overnight.

Prepare for Frying
In a large bowl, combine flour, salt, and pepper. Remove the chicken from the marinade, allowing excess to drip off, and dredge each piece in the flour mixture. Shake off any excess flour.

Heat the Oil
In a large heavy skillet or deep fryer, heat oil to 350°F (175°C). Use enough oil to submerge the chicken pieces halfway.

Fry the Chicken
Carefully place the chicken pieces in the hot oil, being sure not to overcrowd the pan. Fry for about 15-18 minutes, turning occasionally, until golden brown and cooked through (internal temperature should reach 165°F/75°C).

Drain and Serve
Remove the chicken from the oil and drain on a wire rack or paper towels. Let it rest for a few minutes before serving to allow the coating to crisp up.
