Method

Burger Patties

    Prepare the Meat Mixture

    In a large bowl, combine the chorizo sausage and ground beef. Mix well until fully combined.

    Season the Patties

    Add salt, black pepper, and garlic powder to the meat mixture. Mix well and form into two equal-sized patties.

    Cook the Patties

    Preheat a grill or skillet over medium-high heat. Cook the patties for about 5-6 minutes per side or until fully cooked through. Set aside.

Pimento Cheese

    Blend the Ingredients

    In a mixing bowl, combine cream cheese, grated sharp cheddar cheese, diced pimentos, garlic powder, salt, and black pepper. Mix until smooth and creamy.

Chipotle Mayo

    Mix the Mayo

    In a small bowl, combine mayonnaise, minced chipotle in adobo sauce, lime juice, and salt. Stir until well blended.

Corn Fritters

    Prepare the Batter

    In a bowl, mix corn kernels, all-purpose flour, egg, baking powder, salt, and black pepper until just combined.

    Fry the Fritters

    Heat vegetable oil in a frying pan over medium heat. Drop spoonfuls of the batter into the hot oil and fry for about 2-3 minutes on each side until golden brown. Remove and drain on paper towels.

Guacamole

    Mash the Avocados

    Cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Mash with a fork until smooth.

    Mix in Remaining Ingredients

    Add lime juice, salt, diced tomato, diced onion, and chopped cilantro to the mashed avocados. Stir until well combined.
