Spice-Rubbed Chicken

Salad Ingredients

BBQ Wontons

BBQ Ranch Dressing

Method

Spice-Rubbed Chicken

  1. 1

    Prepare Chicken

In a small bowl, mix together paprika, cumin, garlic powder, onion powder, salt, and black pepper. Rub this spice mixture evenly over the chicken breasts.

  2. 2

    Cook Chicken

Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from heat and let rest for 5 minutes before slicing.

Salad Assembly

  1. 3

    Prepare Salad Base

Wash and chop the romaine lettuce into bite-sized pieces and place in a large bowl.

  2. 4

    Add Ingredients

Add black beans, corn, diced avocado, diced tomato, and shredded cheddar cheese to the bowl with romaine.

  3. 5

    Toss Salad

Gently toss all ingredients together until well combined.

BBQ Wontons

  1. 6

    Prepare Wontons

Take a wonton wrapper and place about 1 teaspoon of BBQ sauce in the center. Fold the wrapper over to form a triangle and seal the edges with a little water.

  2. 7

    Fry Wontons

In a deep skillet or pot, heat oil over medium-high heat. Fry the wontons in batches until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.

BBQ Ranch Dressing

  1. 8

    Mix Dressing

In a small bowl, combine ranch dressing and BBQ sauce. Stir until well blended.
