Pork Belly Preparation

Preheat and Season
Preheat your oven to 300°F (150°C). Rub the pork belly with salt and black pepper on all sides.

Roasting
Place the seasoned pork belly on a baking sheet lined with parchment paper. Roast in the oven for about 2 to 2.5 hours, or until the meat is tender and the fat has rendered.

Cooling and Slicing
Remove the pork belly from the oven and let it cool for 15 minutes. Once cooled, slice it into 1/2 inch thick pieces.

Prepare Green Tomatoes
Slice the green tomatoes into thin rounds. Season with a little salt and let them sit for 10 minutes to draw out excess moisture.
Assembly

Spread Cheese
Take a slice of multi-grain bread and spread a generous amount of garlic herb cheese spread on one side.

Layer Ingredients
On top of the cheese spread, layer with spring mix, followed by a few slices of pork belly, crispy bacon, and green tomato slices.

Top and Serve
Spread garlic herb cheese on another slice of bread and place it on top to create a sandwich. Slice in half and serve immediately.
