Prepare the Batter

    Combine Dry Ingredients

    In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper until well combined.

    Add Liquid Ingredients

    Gradually add cold water and beer (if using) to the dry mixture, stirring until the batter is smooth and free of lumps. The batter should be thick enough to coat the back of a spoon.

    Chill the Batter

    Cover the batter with plastic wrap and let it chill in the refrigerator for at least 30 minutes.

Prepare the Onions

    Slice the Onions

    Peel the large onions and slice them into 0.5-inch thick rings. Separate the rings carefully and set aside.

    Heat the Oil

    In a deep frying pan or a heavy-bottomed pot, heat vegetable oil over medium heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

Fry the Onion Rings

    Coat the Onion Rings

    Dip each onion ring into the chilled batter, making sure it is fully coated.

    Fry the Onion Rings

    Carefully place the battered onion rings into the hot oil, frying them in batches to avoid overcrowding. Fry until they are golden brown and crispy, about 3-4 minutes. Use a slotted spoon to turn them occasionally.

    Remove the fried onion rings from the oil and drain on paper towels. Serve hot with your favorite dipping sauce.
