Doughnut Dough Preparation

Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

Combine Mixtures
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.

Chill the Dough
Cover the dough with plastic wrap and refrigerate for at least 30 minutes to allow it to firm up.

Mix Cinnamon Sugar
In a bowl, combine the granulated sugar and ground cinnamon. Mix well and set aside.
Creme Anglaise Preparation

Heat Cream
In a saucepan, heat the heavy cream over medium heat until it just begins to simmer. Remove from heat.

Infuse Vanilla
Split the vanilla bean lengthwise, scrape out the seeds, and add both the seeds and the pod to the hot cream. Let it steep for about 15 minutes.

Mix Egg Yolks and Sugar
In a bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and thick.

Temper Egg Mixture
Slowly pour the warm cream into the egg yolk mixture while whisking continuously to avoid scrambling the eggs.

Cook the Mixture
Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon. Do not let it boil.

Strain and Cool
Strain the mixture through a fine sieve into a bowl. Let it cool completely before serving.

In a deep pot or fryer, heat the vegetable oil to 375°F (190°C).

Shape and Fry Doughnuts
Remove the dough from the refrigerator and roll it out on a floured surface to about 1/2 inch thick. Cut into desired shapes using a doughnut cutter or two round cutters.

Carefully place the doughnuts in the hot oil, a few at a time, and fry until golden brown on both sides, about 2-3 minutes per side.
