Fried Calamari

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Make the Coating
In a medium bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika.

Soak in Buttermilk
Place the calamari rings in a bowl and pour the buttermilk over them. Let them soak for 15 minutes.

Coat the Calamari
Remove the calamari from the buttermilk, letting the excess drip off, and then dredge them in the flour mixture, ensuring they are well coated.

Fry the Calamari
Fry the coated calamari rings in batches for about 2-3 minutes or until golden brown. Use a slotted spoon to transfer them to a paper towel-lined plate.

Serve
Serve the fried calamari hot with marinara sauce.

Add Tomatoes and Seasonings
Stir in the canned crushed tomatoes, oregano, basil, salt, black pepper, and sugar. Bring to a simmer.

Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally.

Serve the marinara sauce warm alongside the fried calamari.
