    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into long, thin strips, about 1/4 inch thick, to create fries. Place the cut potatoes in a bowl of cold water to soak for at least 30 minutes to remove excess starch.

Frying

    Heat the Oil

    In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to check the temperature for accurate frying.

    Dry the Potatoes

    Remove the soaked potatoes from the water and drain them. Pat them dry with paper towels to remove excess moisture, which helps achieve crispiness during frying.

    Fry the Potatoes

    Carefully add a handful of the dried potato strips to the hot oil. Avoid overcrowding the pot. Fry for about 4-5 minutes until they are golden brown and crispy. Use a slotted spoon to remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil.

    Season the Fries

    While the fries are still hot, sprinkle them with salt, black pepper, and garlic powder to taste. Toss gently to ensure even coating.

    Serve the crispy fries immediately with your choice of dipping sauce such as ketchup, mayonnaise, or aioli.
