    Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick, to create fries.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and soak for at least 30 minutes. This helps remove excess starch and makes the fries crispier.

Cooking

    In a deep fryer or a large heavy pot, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure accuracy.
