    Caramelize the Onions

    Slice the large onion thinly. In a skillet over medium heat, add a tablespoon of oil and the sliced onions. Cook for about 15-20 minutes, stirring occasionally, until the onions are golden brown and caramelized. Remove from heat and set aside.

    Prepare the Tomatoes

    Slice the medium tomatoes into thick slices. Set aside for grilling.

    Prepare the Cheese

    Grate or slice the cheddar cheese into your desired thickness.

Cooking

    Grill the Tomatoes

    In the same skillet used for the onions, add a little more oil if needed and place the tomato slices. Grill them for about 2-3 minutes on each side until they are slightly charred and soft. Remove and set aside.

    Assemble the Sandwich

    Spread mayonnaise on one side of each slice of bread. On the non-mayo side, layer the grilled tomato slices, followed by the caramelized onions, and then the cheddar cheese. Top with another slice of bread, mayo side up.

    Grill the Sandwich

    In the same skillet, place the assembled sandwich and grill over medium heat for about 4-5 minutes per side, or until the bread is golden brown and the cheese is melted. Press down slightly with a spatula for even grilling.

    Make the Au Jus

    In a small saucepan, combine the beef broth, soy sauce, garlic powder, onion powder, and black pepper. Bring to a simmer over medium heat. Let it simmer for about 10 minutes to blend the flavors. Remove from heat and keep warm.
