Mix the Ingredients
In a medium saucepan, combine beer, ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, garlic powder, onion powder, smoked paprika, salt, and black pepper. Stir well to blend all ingredients.

Cook the Sauce
Bring the sauce to a simmer over medium heat. Reduce heat to low and let it cook for about 20 minutes, stirring occasionally, until thickened.
Pork Preparation

Prepare the Pork
Preheat your oven to 300°F (150°C). Rub the pork shoulder with olive oil, salt, and black pepper.

Apple Cabbage Slaw Preparation

Mix the Slaw Ingredients
In a large bowl, combine shredded cabbage, julienned apple, grated carrot, mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Toss until the slaw is well coated.

Chill the Slaw
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow flavors to meld.

Shred the Pork
Once the pork is done cooking, remove it from the oven and let it rest for 15 minutes. Shred the pork with two forks.

Assemble the Sandwiches
Slice the pretzel rolls in half. Place a generous portion of shredded pork on the bottom half, drizzle with beer BBQ sauce, add a handful of cheddar cheese, and top with apple cabbage slaw. Cover with the top half of the pretzel roll.
